Laura McKenna’s 3 Ingredient Pumpkin Cake

3 Ingredient Pumpkin Cake Recipe:
This is the easiest dessert you’ll ever make (and it will seriously impress all your guests)!
It’s so simple to make and takes just 3 ingredients. Compare it to other typical cakes made with eggs and oil and it’s surprisingly low fat, too!
I love a good pumpkin pie but I probably make this cake more than any other dessert because it’s too good (and too easy) not to! Everyone always asks for the recipe and they never believe me when I say, “Well, it’s just three ingredients!”
It’s moist. It’s delicious. And it’s packed with the flavors of fall!
What You’ll Need:
| -1 spice cake mix |
| -1 (15oz) can of pumpkin |
| -whipped cream |
What You’ll Do:
Mix together the dry cake mix and the can of pumpkin. Don’t add any of the oil or eggs or anything else that the cake mix calls for on the box. It’s literally just the dry spice cake mix and the pumpkin.
Blend together with a mixer until both ingredients are combined. The batter will be pretty thick. If yours looks like this, you’re doing it right!

Spray a 9×13 cake pan or glass casserole dish of the same size with cooking spray. Then spread the cake batter as evenly as possible into your pan. It will spread but remain pretty thick.
Then bake according to the time and temp on the cake mix box. Some ovens bake a little hotter or quicker than others so you’ll know it’s done when a cake tester or toothpick is inserted into the center and comes out clean.

Once done, take it out of the oven and cool in the pan. Once cool, slice into squares and top with whipped cream. Your whole family will love it!
You can even make this low fat cake even lower in calories by using Lite or Fat Free whipped cream, if you like!
